For this issue of Employee Highlights, we sat down with Nick Stawinski to find out his favorite part of the industry and his most memorable meals.

What is your favorite part about working in the foodservice industry?

Frequently you’re working with trades, contractors, and even foodservice owners that it is their first build, and they lack the knowledge of how the equipment interfaces with the building and the utilities. I enjoy providing the expertise that’s necessary for everyone to understand the intricacies and make them more comfortable with the process. (It’s great) when an owner calls and states how beautiful the equipment is and that they will keep me in mind for future projects and reinforce the reputation of our company to other restaurateurs.

Where do you see the industry headed in the next 10 years?

Not sure. I’ll be retired – I’ve been doing this for about 45 years.

What is your favorite dining experience in the Washington, D.C. area?

Recently, I attended a wedding and reception (on the 31st floor of) the Rosslyn City Center with an amazing view of the city. In addition, it was catered by Sfoglina, which is located on the lower level of the building, and the food was very good.

What do you like to do in your free time?

I do projects that require thought (like working) with cars, wood, etc., but not everyday things. Or if I want to veg, a good rom-com.

Tell us about the most memorable meal you’ve ever had.

Some of the dinners hosted by chemical and food companies at NRA Chicago have been amazing. Some started with strolling about in museums along with violinists with a glass of champagne in your hand. Then dinner, which had a full orchestra playing. And ending up in a tent in the back with cigars and fine after dinner drinks and whiskeys.
